Crispy parmesan potato slices

Soft, tender potatoes surrounded by crispy and savory parmesan make a great side dish for your next steak and potatoes night.

Ingredients:

  • 1 large Yukon gold potato or 2 small ones
  • 34 cup parmesan cheese, grated
  • 1 teaspoon Cajun seasoning (or any other salty seasoning blend)
  • 1 tablespoon olive oil

Directions:

Peel and slice the potatoes into 1/2-inch thick slices. 

In a small pot, add the potato slices and cover with water. Bring to a boil and then cook the potatoes in boiling water for 7 minutes. 

Drain the potato slices and place them on a plate to cool.

In a small bowl, mix 3/4 cup parmesan cheese with 1 teaspoon Cajun seasoning and 1 tablespoon olive oil to form a sandy paste. Add 2/3rds of this parmesan paste to the bottom of an 8 x 8-inch baking dish. Spread the mixture evenly across the bottom of the dish.

Lay the potato slices on top of the cheese mixture in a single layer. Sprinkle the other 1/3rd of the parmesan mixture on top of the potato slices.

Bake at 425 F (218 C) for 25 to 30 minutes or until the cheese is browned and bubbly. 

Serve and enjoy.
