Sun-dried tomato spread

This spread is great on a sandwich with cheese and meat. A bagel sandwiched with cream cheese on one side and sun-dried tomato spread on the other is fantastic.

  • 8.5 ounce jar of sun-dried tomatoes
  • 4 tablespoons tomato paste concentrate (the kind in the squirt bottle not the can)

Directions:

Drain the sun-dried tomatoes and finely chop them. You can save the oil for use in a salad dressing.

Add sun-dried tomatoes and all ingredients to a mixing bowl and mix to combine.

If the spread is too thin, you can add a tiny bit more tomato paste concentrate. If you think it's too thick, you can add a splash of oil and stir again to incorporate.
