Microwave fried capers

Add some tasty texture to your next sandwich with fried capers. Sprinkle a salty and crispy addition onto your next sub or even add them to the top of a cooked slice of pizza.
YIELD
2 tablespoons of fried capers

Ingredients:

  • 13 cup olive oil
  • 2 to 3 tablespoons capers, rinsed and dried

Directions:

Rinse off 2 or 3 tablespoons of capers and dry them on a paper towel.

Add 1/3 cup olive oil and all of your capers to a microwave-safe bowl. Make sure the capers are covered by the oil.

Cover bowl with a paper towel, unless you like caper explosions. 

Microwave for about 2 minutes, remove from microwave and stir.

Microwave another 2 minutes and then remove from the microwave. Strain the capers with a slotted spoon to a paper towel-lined plate. The capers will continue to fry if you leave them in the oil. 

Notes:

You can fry fewer capers if you want. Just know that if you reduce the number of capers or reduce the amount of oil, your capers will fry MUCH faster.
