Jalapeno paloma

Ingredients:
Jalapeno simple syrup- 1 cup sugar
- 1 cup water
- 2 to 3 jalapenos, sliced in half and then into thin slices
- 2 ounces tequila
- 1⁄2 ounce Cointreau
- 1 ounce fresh lime juice
- 3⁄4 ounce jalapeno simple syrup (from above)
- grapefruit soda (pink grapefruit soda will give that rose color)

Directions:
Simple syrup: combine equal parts sugar and water in a small saucepan over medium heat. Cook until all of the sugar has dissolved, but do not bring the mixture to a boil.
Once the sugar has dissolved, remove the pan from the heat and add the slices of jalapeno. Allow the simple syrup to cool, do not strain off the jalapenos, and then store in a sealed container in the refrigerator for up to a month. The jalapeno slices will add more and more flavor the longer they are in the syrup.
Jalapeno paloma: combine tequila, cointreau, lime juice, and jalapeno simple syrup with ice in a cocktail shaker. If you want the drink to be a bit spicier, add 3 or 4 of the jalapeno slices from the jalapeno simple syrup into the cocktail shaker.
Shake the cocktail for 20 seconds, and then strain into a rocks glass over ice. Fill the rest of the glass up with grapefruit soda and add 2 or 3 slices of jalapenos from the syrup to the top of the ice as garnish.
Notes:
If you want to make more or less jalapeno simple syrup, just keep the ratio the same. So 1/2 cup water + 1/2 cup sugar will work just fine. Don't bring it to a boil.
Pink color? You'll only get that pink color if the grapefruit soda that you buy is tinted pink. Otherwise it will look like this:
