Fancy bologna sandwich

This recipe is heavily inspired by the bologna sandwich on the menu at Au Cheval in Chicago. This is a rich, extravagant bologna sandwich that will satisfy even the hungriest of folks.

Ingredients:

  • 1 brioche bun
  • 4 to 6 slices of bologna, thinner sliced is better
  • 2 slices of American cheese or Cheddar if preferred
  • dijonnaise (or just mayonnaise and Dijon mustard)

Directions:

Toast your brioche bun. 

Slice 1 to 4 slits in the outside ring of all of your bologna slices. 

In a medium pan or griddle, over medium-high heat, place slices of bologna. Cook for 2 to 3 minutes to get a little bit of sear on the outside of the meat.

Once the bologna is warm and starts taking on some seared color, arrange two piles of meat in the pan and place a slice of cheese on top of each pile

Cook the bologna and cheese for another minute. The cheese should start to melt a little. 

While the cheese is melting a little, add any condiments to the bottom and top of your toasted bun. 

Place one pile of bologna on top of the other pile (sandwiching some cheese in the middle) and move the whole big bologna pile to the bottom bun. 

Add any extra dijonnaise sauce on top of the cheese/bologna pile and then top everything with the top bun. 

Serve the sandwich and enjoy.
