Crispy oven roasted bone-in chicken thighs

This is a simple way to prepare bone-in, skin-on chicken thighs in your oven. The skin on top renders out a bit during the cooking process leaving you with a seasoned and slightly crispy exterior crunch on each juicy bite.

Ingredients:

Spice blend
  • 1 teaspoon salt
  • 12 teaspoon ground black pepper
  • 12 teaspoon onion powder
  • 12 teaspoon garlic powder
  • 14 teaspoon paprika

  • 2 tablespoons olive oil
  • seasoning blend (from above)

Directions:

Spice blend: combine all ingredients from the spice blend in a small bowl and mix to combine thoroughly.

Baked chicken: preheat the oven to 400 F.

During the chicken seasoning process try to remember that you will have one dirty hand that touches the chicken and try to keep the other hand clean. The clean hand will handle adding olive oil and sprinkling on seasoning spices while the "dirty" hand will manage the act of flipping the chicken and rubbing the oil and seasonings into the chicken pieces.

Arrange all chicken thighs skin side up on a cutting board or in a baking dish. Sprinkle around a teaspoon of olive oil on top of the skin and with your "dirty" hand rub the oil into the top of each piece of chicken. Then sprinkle about half of the seasoning blend on top of the skin-side-up chicken pieces. 

Flip each piece and add more oil to the bottom of each piece. Rub the oil in and then sprinkle the and then rub in the rest of the seasoning on each piece of chicken. Add each piece of seasoned chicken, skin-side-up on a baking dish or sheet pan. Wash your hands.

Once the oven is fully preheated, bake the chicken for 35 to 40 minutes.
