Spicy MSG pickled okra

Pickled okra is best enjoyed as a snack, but you can slice them up to add to your next burger or sandwich if you want to get a little wild.

Ingredients:

  • 15 to 20 okra (between 1/2 and 1 pound)
  • 2 cups white vinegar
  • 1 cup water
  • 1 tablespoon plus 1 teaspoon white sugar
  • 1 tablespoon salt
  • 2 teaspoons MSG
  • 1 teaspoon dried red pepper flakes (double this for extra spicy)

Directions:

Pack okra into 2 or 3 pint-sized mason jars. Place the okra stem side down in the jars.

Add vinegar, water, sugar, salt, msg and red pepper flakes to a small saucepan over medium-high heat. 

Bring the vinegar mixture to a boil. As soon as it starts boiling, stir the mixture, remove from the heat, and pour it into the jar over the okra. This is obviously a hot pot pouring hot liquid, so be careful. I typically do the pouring process in the sink so any spilled near-boiling liquid does not hurt anyone. 

If you do not have enough liquid to fill the jars to the tops, you can add water until they are filled.

Close the jar lids and let them rest on your counter until cool. 

Add to the fridge and enjoy some great pickled okra over the next few weeks.
