Peel and thinly slice your shallots into rings.
Separate the rings and add them all to a microwave safe bowl.
Add 1/2 cup canola or vegetable oil to the bowl. Mix around the shallots so that they are all coated.
Put bowl in microwave and cook for 5 minutes on high.
Pull bowl out and carefully stir everything up.
Put back in microwave and cook for another 30 seconds. Pull out and stir.
You're going to want to microwave in 30 second intervals, removing the bowl and stirring between each interval. You want to pay close attention to the shallots changing to a tan color. Depending on the amount of shallot that you have and the strength of your microwave, this may take you anywhere from 6 total minutes to 10 minutes. Just keep microwaving for 30 seconds and stirring. Rinse and repeat. Have a drink.
Once the shallots are start to turn a color between light tan and light brown, remove from the oil with a fork and transfer to a paper towel lined plate.
Sprinkle with some kosher salt and add to a burger or sandwich for added flavor and crunch.
Notes:
All microwaves seem to be different. Mine takes between 6 and 9 minutes for 2 to 3 small shallots and a half cup of oil.
Remember, the shallots in the oil are still almost at frying temperature when they come out of the microwave. So be careful. Also make sure to quickly move them from the oil to drain when you think they're done because they'll continue to cook.
