Preheat oven to 300 degrees F (150 C).
Add oil, maple syrup, and salt to a large bowl and stir to combine well. Once combined, add oats and sunflower seeds and stir to incorporate well.
Once everything is stirred and combined, place it on a parchment-lined sheet pan and spread it all out.
Cook in the oven for 10 minutes, remove the sheet pan, stir the granola, and place the pan back in the oven for another 10 minutes.
After 20 full minutes in the oven, remove the pan and sprinkle on the dried cranberries. With a spatula press the cranberries into the granola and allow everything to cool before storing the granola in a closed container in a cool spot in your kitchen.
Notes:
You can use slivered almonds, crushed peanuts or pecans in place of the sunflower seeds. Or use a combination of multiple different nuts if you want.
Raisins also would be a good substitution for dried cranberries or craisins.
